Vegan Holiday Dinner

It’s early December and Christmas is just around the corner. If you still haven’t figured out what to cook for your vegan holiday dinner then I got you covered. I’ve put together a list of simple recipes that you can try out for the holidays.

Time flies during the holidays and making a whole dinner can be stressful, so I purposely made these dishes easy to prepare in just a couple of hours on the same day.

So let’s start with our main dish first, as this is the dish which will take the longest to prepare.

Lentil Meatless Loaf

Vegan Lentil meatless loaf

This lentil loaf has been a hit with all of my friends who have tasted it, even the kids during Christmas! It is super tasty and has a rough, nutty texture and it is perfect to serve as a holiday dinner.

Lentil Meatless Loaf

A simple yet tasty loaf for your main course.

Servings 6 people

Ingredients

Loaf

  • 400 g cooked white beans
  • 230 g cooked lentils
  • 1 medium onion,chopped
  • 3 medium carrots, grated
  • 3 large mushrooms, finely chopped
  • 200 grams oats
  • 1 tbsp corn starch

Spices for the loaf

  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp soy sauce
  • 1/4 tsp salt
  • 1/2 tsp dried rosemary
  • 1 tsp dijon mustard
  • a pinch ground ginger
  • a pinch ground nutmeg

Glaze

  • 250 ml ketchup
  • 1/2 tsp agave syrup/sugar
  • 1 tbsp soy sauce
  • 1/2 tsp liquid smoke/smoked paprika

Instructions

Loaf

  • Start by preheating the oven to 180C. In a larger bowl, mash the beans and add the carrots and mushrooms.
  • Cook the onions with the lentils for about 6 minutes. Add to the bowl with the others. 
  • Add in all the spices and mix everything by hand. You should have a wet mixture, add in the oats 100g at a time. Mix everything well and add the remaining oats, more if mixture is too wet. 
  • Grease the inside of a larger breadform, add in the mixture and even it out in the form.  Pour the glaze over the loaf. Bake in the oven for at 90 minutes, check the loaf in the last 10 minutes by sticking a wooden chopstick in the middle. If it comes out clean, it can then be removed from the heat.
  • Let the loaf rest for 15 minutes before turning it over. After turning it over, wait 15 minutes before cutting into it. 

Glaze

  • Add the ketchup in to a smaller bowl. Add in the rest of the ingredients and mix well. Adjust taste if necessary.

Soy Mince Patties

I made these soy patties for Christmas last year, and they were a hit with both the adults and the kids. These patties are super easy to make and taste delicious.

Resting time 30 minutes

Ingredients

  • 200 grams dried soy mince
  • 200 grams oats
  • 200 grams cooked white beans
  • 1 small onion, chopped
  • 2 garlic cloves, finely chopped
  • 2 tbsp corn starch
  • 1/4 tsp ginger powder
  • 1/4 tsp nutmeg powder
  • 2 tbsp soy sauce
  • salt & pepper to taste

Instructions

  • Start by adding dried soy mince to a larger bowl, add in about 100ml hot water and, set aside and let it absorb for 10 minutes. Drain excess water.
  • In a larger bowl start by mashing the white beans. Then add the onions, garlic, oats and the spices. Mix well and thereafter add the soy mince and mix everything by hand.
  • Add more oats if the mixture is too wet. Let the mixture rest in the fridge for 30 minutes before cooking. 
  • Start forming the patties in your hands, try to not make them very big, as they might crumble and not stick together.
  • Heat a pan on medium heat and cook the patties in some oil. Cook the patties for about 4 minutes on each side, until golden brown. 

Chickpea Waldorf Salad

Make this classic waldorf salad with chickpeas. It just goes really well with everything, it’s fresh and tasty.

A classic salad with added chickpeas for some extra nutrition! 
Course Salad

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

Salad

  • 2 large apples, hearts removed
  • 3 tbsp lemon juice
  • 1,5 dl mayo
  • 1 small onion
  • 1 garlic glove, finely chopped
  • 5 stalks of celery, thin slices
  • a handful of parsley, chopped
  • 1/2 head of iceberg lettuce, chopped
  • 200 grams canned cooked chickpeas
  • 1 tsp corn starch
  • 1 tsp garlic powder
  • crushed walnuts to top
  • salt & pepper

Mayo

  • 2 tsp aquafaba (drained liquid from the chickpeas)
  • 1/2 tsp vinegar/lemon juice
  • 1/2 tsp dijon mustard
  • 150 ml sunflower oil
  • salt & pepper to taste

Instructions

Mayo

  • Add all the ingredients in to a container and place an immersion blender stick in the bottom. Pulse a couple of times until the mayo starts to emulsify, then move the stick up and down to mix in the remaining oil.

Salad

  • Cut the apples into cubes. Add to a larger bowl and toss with lemon juice. Add in the mayo as well and mix together. Set aside.
  • Add the celery, onion, garlic, parsley, along with the lettuce to the bowl and toss until covered with mayo sauce. 
  • In smaller bowl, toss the drained chickpeas with the corn starch, garlic and a pinch of salt until evenly coated. In a smaller pan cook the chickpeas on medium heat until crispy brown. Add it into the salad and toss again.
  • Serve the salad in a bowl and top with crushed walnuts.

Simple Mushroom Gravy

MUSHROOM GRAVY

No dinner is complete without a good sauce. This gravy will add a lot of flavor to your dishes.

Course Side Dish
Prep Time 25 minutes

Ingredients

  • 250 grams white button mushrooms
  • 3 tbsp vegan butter
  • 2 tbsp all purpose flour
  • 400 ml veggie stock
  • 1 tbsp soy sauce
  • 1/2 tsp thyme/rosemary

Instructions

  • In a larger saucepan, heat up the butter. Add in the sliced mushrooms and cook until they have released the water.
  • Sprinkle over the flour and mix well. Cook for a couple of minutes. Add in soy sauce and the herbs.
  • Add in the veggie stock and simmer for 10-15 minutes. Reduce by half.

Garlic & Rosemary Roasted Potatoes

Ingredients

  • 4 large potatoes, peeled
  • 4 garlic cloves, finely chopped
  • 1 1/2 tbsp rosemary (fresh is best)
  • 3 tbsp olive oil
  • 1/2 tsp sea salt

Instructions

  • Preheat the oven to 200C
  • Slice the peeled potatoes into equal sized rings.
  • Toss them into a larger bowl then add in oil, rosemary, garlic and salt. Toss them around until coated.
  • Spread the potatoes on a baking tray and pop them into oven for about 20-25 minutes, until you start to see the edges turn crisp brown.

Walnut & Mushroom Paté

A perfect spread for those who like to have some bread alongside their dinner. Full of flavor and smooth texture.

A super tasty paté, perfect as a bread spread

Ingredients

  • 75 grams roasted walnuts
  • 100 grams mushrooms
  • 1 medium shallot
  • 1 garlic glove
  • 1 tbsp soy sauce
  • handful of fresh basil
  • salt & pepper

Instructions

  • Start by roasting the walnuts on medium high heat until browned. Set aside.
  • Cook the onions, garlic and mushrooms. 
  • Add the cooked vegetables along with the walnuts, basil and the spices to a food processor and let it run until a smooth paste* forms. Adjust seasoning if needed. 

Notes

You can either make it very smooth or leave the mixture a bit coarse. I like the texture of it when it’s a bit more coarse and rougher, but still easy to spread on a slice of bread. 

Simple Banana Bread

Vegan Banana Bread

This simple banana bread will make a great dessert for your holiday dinner. Perfect with a cup of coffee on the side.

Ingredients

  • 250 grams oat flour run regular oats through a blender
  • 100 grams brown sugar
  • 100 grams all purpose flour
  • 1 tbsp cocoa powder
  • 1 1/2 tsp baking powder
  • 120 ml any plant milk
  • 3 ripe bananas
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 flax egg (finely ground flaxseeds, 1tbsp + 1 tbsp water)
  • 50 ml coconut oil
  • a pinch of salt

Instructions

  • Preheat the oven to 180C.
  • Add the oat and all purpose flour to a bowl.
  • Add the brown sugar, baking powder, salt, nutmeg and cinnamon.
  • Add the bananas to your blender along with the plant milk, cocoa powder and coconut oil and blend.
  • Pour the blended mix into the mixing bowl and mix it into a smooth batter.
  • Grease a loaf pan and pour in the batter and place into the oven to bake for 60+ minutes.
  • It’s ready when you put a toothpick into the center of the loaf and it comes out clean.
  • Let it cool for 30 minutes before turning and cutting into it.
